Thrive Boldly: Sunrise Supper: A Three-Brain Meal for Those Who Give So Much

Updated: 6 days ago

The first time I visited my parents’ senior living facility, the first thing I saw was a hearse. No sugarcoating it—a body was coming out as I was walking in. The nurses lined up for a quiet, dignified “lost angel” walk, honoring the life that had just passed. And in the middle of all that, the place smelled like freshly baked cookies.

My daughter took one look around and said, “This place should be called Sunset, not Sunrise.” Fair point.

But here’s what stuck with me: The nurses. Ever patient, ever kind. Smiling instead of snapping, offering presence instead of frustration.  This meal is for them—something nourishing, easy, and full of what they need to replenish their minds, hearts, and bodies after a long shift of giving, giving, giving.

Three-Brain Nourishing Dinner for Caregivers

A comforting yet energizing Lemon-Herb Salmon & Quinoa Bowl with Roasted Vegetables and a Golden Milk Latte—packed with nutrients to support mental clarity, emotional resilience, and digestive health.

Why This Meal?

  • Head Brain: Salmon provides omega-3s for brain function and reducing stress. Quinoa contains magnesium, supporting focus and relaxation.

  • Heart Brain: Roasted carrots and sweet potatoes offer beta-carotene and natural sweetness to soothe and uplift. Olive oil and herbs support circulation and heart health.

  • Gut Brain: The fiber in quinoa and roasted vegetables helps digestion, while the turmeric in the golden milk reduces inflammation and supports the gut-brain connection.

Lemon-Herb Salmon & Quinoa Bowl

Serves: 4 Time: 30 minutes

Ingredients:

  • 4 salmon fillets (or tofu for a vegetarian option)

  • 1 cup quinoa, rinsed

  • 2 cups water or vegetable broth

  • 2 medium carrots, sliced

  • 1 sweet potato, diced

  • 1 zucchini, sliced

  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • ½ tsp turmeric

  • Salt & pepper to taste

  • Juice of 1 lemon

  • 1 clove garlic, minced

Instructions:

  1. Cook the quinoa: Bring water or broth to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes. Remove from heat and fluff with a fork.

  2. Roast the vegetables: Preheat oven to 400°F (200°C). Toss carrots, sweet potatoes, and zucchini with olive oil, oregano, turmeric, salt, and pepper. Roast for 20 minutes, flipping halfway.

  3. Prepare the salmon: Place salmon fillets on a baking sheet. Drizzle with olive oil, lemon juice, minced garlic, and a pinch of salt and pepper. Bake for 12-15 minutes until flaky.

  4. Assemble the bowl: Place quinoa at the base, top with roasted vegetables and salmon, and drizzle with extra lemon juice.

Drink Pairing: Golden Milk Latte

A warm, spiced turmeric latte to relax the body and ease stress after a long shift.

Ingredients:

  • 1 cup almond or oat milk

  • ½ tsp turmeric

  • ¼ tsp cinnamon

  • ½ tsp honey or maple syrup

  • Pinch of black pepper (enhances turmeric absorption)

  • ½ tsp grated fresh ginger (optional)

Instructions:

  1. Heat the milk in a saucepan until warm but not boiling.

  2. Whisk in turmeric, cinnamon, honey, black pepper, and ginger.

  3. Pour into a mug and enjoy.

Gratitude Before Eating

Before taking the first bite, pause. Take a deep breath and reflect on the care given and received today. A simple mantra for the caregivers:

"May I be nourished as I nourish others. May kindness return to me as I have given it. May my heart, my mind, and my body be replenished."

Music to Eat By

Soft and soulful, the perfect backdrop for unwinding after a demanding day:

  • “Clair de Lune” – Debussy (for the head, calming and meditative)

  • “What a Wonderful World” – Louis Armstrong (for the heart, a gentle reminder of beauty)

  • “Weightless” – Marconi Union (for the gut, scientifically proven to reduce stress)

This meal is a small gift for those who give so much—fueling the mind to stay sharp, the heart to stay open, and the gut to stay strong.

Because even those who dedicate their lives to caring for others deserve to be deeply cared for.
